I grew up eating hearts of palm right out of the can, so adding them to salads is nothing new to me. They have a slightly nutty flavor similar to artichoke hearts, with a creamy and crunchy texture. They combine perfectly with lemon, arugula, and avocado. If you’re new to hearts of palm, they are sold in a jar or can at the supermarket, and they even come in noodle form, which I used in this Hearts of Palm Noodle Peanut Stir Fry. Make it a meal with protein like chicken breast, shrimp, air fryer roasted chickpeas or salmon.

Creamy Pumpkin Polenta

There’s no cream in this Creamy Pumpkin Polenta. Instead, this polenta is made with pumpkin puree, Pecorino Romano, and a pinch of nutmeg – and it’s delightful.

I love creamy polenta and had wanted to try a pumpkin version by mixing some puree into it. I was planning on adding cream or cream cheese, but it turned out so creamy without it I left it out. This super simple recipe, made with basic pantry ingredients, is the perfect cozy comfort side dish. Serve it topped with roasted veggies or your favorite sauce, like this Slow Cooker Beef Ragu or Slow Cooker Bolognese.

I always have sofrito in my freezer in ice cube trays to whip up the tastiest beans whenever my husband asks for them, it’s his favorite! On nights I don’t have time to make them from scratch, I whip up this easy canned black beans version! This would work fine with red or pink beans as well.  It’s vegetarian and gluten free, loaded with fiber and works as a main or a side dish over rice. Slow Cooker Beef Ragu

My slow cooker recipes are so popular this time of year. I have a delicious slow cooker beef ragu in my Fast and Slow cookbook, made with chunks of beef that mimic short ribs. For this recipe, I wanted to make it with ground beef, which is more economical. I don’t typically like lean ground beef in sauce, but the slow cooker’s low heat makes it so tender you won’t know the difference. Serve it over your favorite pasta, roasted spaghetti squash, or, my favorite… a combination of whole wheat spaghetti and spiralized zucchini.
