These Chocolate Chip Pumpkin Muffins are always such a hit on my blog, I knew I would love this cream cheese swirl version! They take less than 30 minutes to bake and the best part, these pumpkin muffins are under 200 calories! SO much lighter than any bakery or Starbucks muffins. Most pumpkin recipes use at least 1/2 cup butter or oil but these only use 2 tablespoons for the whole batch. Thanks to the canned pumpkin, they are so moist without adding a ton of butter or oil.

I’m usually pretty sad when summer comes to an end, but I do love the fall! Seeing the leaves change colors, apple picking and all the wonderful things we can do when the weather cools! This fall fruit salad made with apples and grapes is the perfect fall treat. It’s light and crisp, requires no cooking and is absolutely addicting! Thanks to Kim Kardashian, the viral chia seed cereal has been all over the internet. It’s very similar to chia pudding, only not as thick, and you don’t have to wait overnight for the seeds to plump up. I love chia pudding, like my Mango Coconut Chia Pudding, so I knew I would love this chia cereal. I add protein powder to keep me fuller longer, and it’s was perfect. If you need a high protein, low-carb dish you can whip up in under 20 minutes, these Fish Taco Bowls are it! Air fryer or saute 6 minutes!

I love taco bowls, so why not make a fish taco bowl! It’s super simple made with bite-sized fish, seasoned with Cajun seasoning, and cooked in the air fryer for 6 minutes! If you don’t have an air fryer, just make this in a skillet instead! I got my hands on some blackfish and heard it was great for fish tacos, so I turned it into this quick bowl with a veggie slaw as the base drizzled with spicy mayo, so good! This bowl is spicy, fresh, and flavorful and takes only minutes to whip up! More of my favorite air fryer recipes are Tzatziki fish tacos, Air Fryer Fried Shrimp Sandwich, and Air Fryer Salmon!

This Spaghetti and Turkey Meatball Soup is a one pot meal my whole family loves and leftovers are great for lunch! I first shared this back in 2011, I used to make this all the time when Madison was little. It’s a perfect back to school dinner! I finally got a chance to rephotograph it, which I have wanted to do for a while. It’s very popular in my home, and I’m sure it will be in yours too. More kid-friendly meals your family might enjoy are Instant Pot Spaghetti and Turkey Meatballs, Crock Pot Turkey Chili, and Madison’s Favorite Beef Tacos.

This delicious Grilled Chicken Panini with Zucchini, Tomato, and Mozzarella highlights end-of-summer vegetables on sour dough bread.

There’s something about a hot sandwich that just feels more satisfying sometimes especially when you add protein like I did in this Grilled Chicken Panini. With the grilled chicken, this sandwich has 26 grams of protein! I usually use sour dough bread because it contains higher levels of vitamins, minerals, and antioxidants than many other breads. I served this for dinner with some tomato soup, which was so delicious. Some other panini recipes you might want to try are this Eggplant Panini with Pesto, Asparagus Prosciutto Panini with Garlic Mayo, and Chicken Arugula Provolone Panini with Chipotle.
