Air Fryer Sweet Plantains (Maduros)

Air Fryer Sweet Plantains or Maduros are an easy and healthy way to make this classic Latin side dish.

I grew up eating plantains every way you can imagine! Depending on the ripeness of the plantain, you’ll get different results. Mom makes them on the grill or fries them but I love making them in the air fryer! For sweet maduros, the best plantains are the ones that have black skins and tender flesh. The darker the skin, the sweeter they are, which is exactly what you want. Make these Air Fryer Maduros along with my Picadillo, Carne Bistec, or any Latin dish you like. Three-Cheese Zucchini Quiche

This delicious Three-Cheese Zucchini Quiche, made lighter without heavy cream, is perfect for end-of-summer zucchini for breakfast,  brunch or lunch.

Trying to adapt quiche to make it healthier is challenging because you can’t skimp on the pie crust (which is the best part, in my humble opinion. Aside from the buttery crust, quiche is also typically made with a good amount of heavy cream and cheese. I tested this Three-Cheese Zucchini Quiche a couple of times, and I think you’ll love how it turned out! I have many more healthy quiche recipes on my blog. Zucchini Bread

This moist and delicious Zucchini Bread with walnuts, cinnamon, and vanilla, is made lighter with applesauce and is a great way to use up that summer zucchini.

I modified my Chocolate Chip Zucchini Bread to make this non-chocolate quick bread with lots of cinnamon, walnuts, and vanilla. I love how this came out!! It’s not overly sweet – just enough to be perfect for enjoying with your morning coffee. I love this soup, and this is the perfect time of year to make it with summer corn at it’s sweetest! The temperatures we were having last week were in the high nineties and soup was the last thing on my mind. But finally we are back in the eighties, and a bowl of soup is always comforting to me.

Tuna Tartare with Cucumber and Avocado

Tuna tartare may sound fancy, but it’s really easy to make! Combine fresh sushi grade tuna, cucumber, avocado, scallions, and the sauce ingredients and serve with baked wonton chips.

My friend gave me a freshly caught tuna, and I created this simple tuna tartare recipe as an appetizer to share with my family. It’s so fresh and light – they loved it! Lentil Salad

I love warm lentils, like in my Chicken and Lentil Soup and Lentils and Rice with Eggs and Bacon, but I was never really a fan of lentils in a salad (I’m a picky legume eater). But that all changed years ago when I bought a cold lentil salad at a health food store. I enjoyed everything about it – except for the high price. Lentils are so affordable to cook at home, so I knew I had to try making the salad myself. My homemade version was a fraction of the cost of the store-bought one, so save your money, and make this salad ASAP! It’s also vegan, high in fiber and protein, and only about 100 calories per serving.

Popcorn chicken is a fun, snackable way to get your protein fix (30 grams per serving!). Originally developed in Taiwan in the 70s and then introduced in the US at Kentucky Fried Chicken in the 90s, popcorn chicken is small bites of crunchy chicken you can eat like popcorn. It’s traditionally deep fried and delicious but obviously, not the healthiest option on the menu. Making this from scratch is easy and another healthy way to enjoy air fryer chicken breast. The texture resembles a quiche, making it the perfect side dish for brunch, lunch, or dinner.
