Then Sunday is the day to celebrate all the phenomenal moms out there- it’s Mothers Day! I am so thankful for my mom, my mother in law and all the other moms in my life. This easy Salmon Rice Bowl is fast and easy, made with just a few ingredients! Salmon salad using canned salmon is the star of the dish served over brown rice (I love frozen brown rice from Trader Joes) with diced cucumbers, sriracha, scallions, and furikake or nori. I am always trying to share new, quick lunch ideas that don’t take too much time to make. Earlier this week I posted an avocado quinoa salad as a vegetarian lunch option. Like tuna, canned salmon is a great pantry staple for protein, and it’s budget-friendly. More canned salmon recipes you may like are these Waffled Salmon Cakes, or swap the tuna for salmon in this Mayo-Less Tuna Pasta Salad.

This Avocado Quinoa Salad is bright, zesty, and delicious, and the ingredients remind me of what I typically put in my guacamole. I love this quinoa salad on days I want to go meatless for lunch. I’ve published quite a few quinoa salads over the years, and I love all of them, but this might be my new favorite! Some other favorites are this Mediterranean Quinoa Salad and this Southwestern Black Bean Mango Quinoa Salad.

Swiss Chard Frittata

Swiss Chard Frittata is made with sweet caramelized onions, Swiss chard, eggs and cheese, perfect for breakfast or brunch.

Swiss chard is one of my favorite leafy green vegetables, and it’s so easy to cook. You can eat the leaves and the stems (just cook the stems a little longer since they’re tougher). It’s an excellent source of vitamins K, A, and C, minerals, phytonutrients, antioxidants, and fiber. This lightened up frittata uses half egg whites and half whole eggs. If you want to cook more with Swiss chard, try my Chicken Cassoulet with Sausage and Swiss Chard and Swiss Chard Eggs Benedict.

I found a proverb that says ” No matter how long the winter, spring is sure to follow”. I believe this is talking about much more than just seasons, but right now I will happily just take new blooms, sunshine and warmer weather! Salmon Tikka Masala

Salmon Tikka Masala is a delicious Indian-inspired dish in a creamy tomato based sauce made with coconut milk and spices, perfect served with naan, roti, or over rice.

This delicious dish can also be made with chicken, fish or tofu as the sauce is flavorful and is the star of the dish. I’ve made a similar dish, Instant Pot Chicken Tikka Masala with Cauliflower and Peas in the pressure cooker but I loved this salmon version made in a skillet, the sauce comes out much thicker on the stove. Salmon is my favorite fish and I try to incorporate it in my diet a few days a week. We LOVE empanadas in my house (Who doesn’t?!). I grew up on them and always have leftover picadillo in my fridge or freezer because I make it at least twice a month (here are my skilletslow cooker, and instant pot versions). These healthy air fryer empanadas are one of my favorite ways to use up the leftovers. Made with frozen store-bought empanada dough, they only take minutes to cook. They’re also excellent to pack in your kids’ lunchboxes – Madison loves taking them for school lunch.
